Delicious first course.
For best results, proceed with cooking in three steps:
- ROASTING: brown a chopped onion with butter in a pan, add the rice and toast well. It should take on a translucent appearance.
- COOKING: Over medium heat, gradually adding boiling stock to the rice, stirring often.
- CREATING: Once cooking is complete, remove the pan from the heat, add the butter and grated Parmesan, mixing well.
